- প্রথমে বেগুনটার গায়ে একটু সরষের তেল ভালো করে মাখিয়ে নিয়ে ছুরি দিয়ে চারদিকটা লম্বা করে চিরে নিলাম। তারপর ওই চেরার মাঝে একটা করে কাঁচালঙ্কা আর একটা করে গোটা রসুন পুরে দিলাম।
- গ্যাসের উপরে এবার একটা তারজালি রেখে তার ওপর বেগুনটা আর টমেটো দুটো বসিয়ে প্রায় দশ মিনিট ধরে এদিক-ওদিক করে ভালোভাবে পুড়িয়ে নিলাম।
- ভালোভাবে টমেটো ও বেগুনটা পুড়ে গেলে বেগুনের ছালটা ছাড়িয়ে কাঁচা লঙ্কা পোড়া, রসুন পোড়া, টমেটো এবং বেগুন একসাথে ভালো করে মাখিয়ে নিলাম তারপর এর মধ্যে ধনেপাতা কুচি আর প্রয়োজনমতো নুন, সর্ষের তেল দিয়ে ভালো করে মাখিয়ে নিলাম।
- এবার গ্যাসেতে একটা কড়াই বসিয়ে তাতে একটু সরষে তেল দিয়ে প্রথমে রসুনকুচি, তারপর পেয়াজ কুচি ভাল করে ভেজে নিয়ে টমেটো ও বেগুন পোড়া মাখাটা দিয়ে আরো ভালোভাবে কষিয়ে নিলাম। প্রয়োজনমতো নুন এবং ধনে পাতা কুচি ছড়িয়ে নামিয়ে নিলাম। একদম তৈরি হয়ে গেলো আমার রেসিপি "বেগুন ভর্তা"। গরম ভাত বা রুটির সাথে খেতে অপূর্ব লাগে।
