  1. Prepare 1 cup raw rice (Basumathi rice)
  2. Make ready 2 cups water
  3. Make ready 2 cups curd
  4. Prepare 2 nos chilly green
  5. Prepare 1 tsp ginger grated
  6. Get 1 tsp mustard seed asafoetida jeerakam , powder and each
  7. Get 1 tbsp urad dal
  8. Prepare 1 tbsp curry leaves corriander ,and leaves each
  9. Take 1 chilly dry red
  10. Take 1 carrot grated
  11. Get 1 tbsp oil

In the state of Tamil Nadu it is called thayir saadam, and in Telangana and Andhra Pradesh it is called perugannam/daddojanam. Add salt and sugar and keep aside. Now heat oil in a pan. Add mustard seeds, cumin seeds and chana dal and wait till the dal turns light brown.

Steps to make Curd Rice:
  1. Add one cup of rice to 2 cups of boiling water and cook till the rice is soft.
  2. Take out from fire,and mix the rice with 2 cups of curd and required salt.Now splutter the mustard seed in the hot oil in a pan,add jeerakam,urad dal,redchilly,followed by grated ginger,curry leaves,green chilly, and asafoetida powder.Take out from fire and add these to the rice-curd mixture.Mix thoroughly.Serve hot or cold.Decorate with grated carrot and corriander leaves on the top. Now heat oil in a pan. Add mustard seeds, cumin seeds and chana dal and wait till the dal turns light brown. Now add chilli, hing, cashews and curry leaves and allow these to sizzle. This yummy rice, seasoned with fresh ginger and garlic, curry leaves, and cinnamon, is an excellent way to use up leftover cooked white rice. It tastes awesome hot or cold, especially hot on cold winter nights.
