  4. Bake the pie for 20 minutes, then reduce the oven temperature to 350°F (180°C). Bake until the filling bubbles and the crust is golden, 55 to 60 minutes more. - - Transfer the pie to a wire rack and let cool for at least 1 hour before slicing and serving. Serves 8.

For a pretty pie, cut shapes out of your top crust using a small cookie cutter or knife. Fill with the cooled cherry filling. Roll out the other round of dough to the same size and place it over the pie. Trim the excess dough around the edges and crimp the top and bottom crusts together to seal them.
