- Take 1 tea spoon salt

- Take one large bowl & put maida,kalaunji,salt,soda & mix them
- Pour lukewarm ghee into the mixture & again mix it properly
- Now make a dough, as for Puri by putting some 1/2 cup warm water into the mixture
- Let it rest for 5 minutes. Knead the dough & take one lump & spread it to the shape of roti on the kitchen platform with the help of Belan & cut into 2 piece
- Let one piece be plain & make stripes on the second piece with the help of Knife & make a dilute mixture by putting 1 tea spoon maida with water in a small bowl
- Now spread this mixture on tips of both the pieces throughout & paste them properly by putting one piece upon the other
- And press them gently
- Now shape this into a cone and press the edges after putting some dilute Maida mix
- Fill some potato mixture into the cone & again seal the top edges properly
- Make the shape of Samosa by twisting a bit as shown in the pic below
- Let these Samosas rest in fridge for 30 minutes
- Put refined oil as per requirement in a Kadahi and heat it to the desired level,put the Samosas taken out from the fridge into Kadahi & put the flame between slow to medium
- After 5 minutes, turn the Samosas upside down, take out from the pan after they are golden brown,serve the Samosas with green Chutney
